Spinach and Chickpeas

1 onion
2 garlic cloves
6 oz. tomato paste
1 can chickpeas
2c vegetable broth
10 oz. spinach
manchego cheese
salt
olive oil

Chop 1 onion. Add to cazuela and grate 2 cloves garlic. Add 6 oz. tomato paste and salt. Add 1 can chickpeas and 2 cups broth. Add spinach by the handful while cooking down. Add diced manchego cheese and let melt.
