Braised Spanish Chicken

1 medium purple onion
4 chicken thighs
4 chicken drumsticks
2 tomatoes
1 red pepper
1/2c dry white wine
3 thyme sprigs
2 bay leaves
2T sherry vinegar
1 chili pepper

Dice 1 medium purple onion. Brown thighs and drumsticks in pan. Chop 2 tomatoes and 1 red pepper. Once chicken is browned move to oven safe platter. Cook onions and peppers in pan until softened. Add tomatoes, 1/2 C dry white wine, 3 thyme sprigs, 2 bay leaves, 2 T sherry vinegar and 1 chili pepper. Simmer until liquid is reduced by half. Cover chicken with mixture and cook for 350° for 1 1/4 hours.
