Hot Chocolate and Churros

Hot Chocolate

2c whole milk
6 oz dark chocolate
2/3t cornstarch
2t white sugar (optional)
1/2t cayenne pepper (optional)

Chop chocolate into half-squares. Pour milk into saucepan and whisk in cornstarch until dissolved. For sweeter drink add sugar. Heat mixture over medium heat until it boils, stirring frequently. Remove from heat and add chocolate. Stir until completely dissolved. For spicier drink, stir in cayenne pepper. Serve immediately with churros.

Churros

1c+1T water
1c all purpose flour
1t baking powder
1/2t salt
1/4t cinnamon
olive oil

Sift flour and stir in baking powder, salt and cinnamon. Boil water, remove from heat and whisk in dry ingredients. Stir until dough is consistent and lump free, about 2-3 min. Let dough rest about 5 minutes. Fill a churrera or pastry sleeve with star tip with dough. Heat oil to medium heat. Squeeze the dough out in circular motion and keep spirals separate. Once golden remove and rest on paper towels. Cut spirals into sticks and sprinkle with sugar. Serve with hot chocolate.
