Roasted Vegetable Soup

Simple and Delicious!

5 cups roasted vegetables
8 cups chicken or vegetable stock

In food processor puree batches of vegetable and stock. Return to pot and continue until vegetable and stock are combined. Season with salt and pepper, parmesan cheese.

Garnish with croutons, fried onions, a dollop of sour cream, or anything you want. Drizzle olive oil and sprinkle with chives or parsley.
