Orange Glazed Pork Loin

1 pork loin
1 small onion
5 garlic cloves, grated
1c orange juice
1t salt
3 thyme sprigs
2T sherry vinegar
pepper

Season a pork loin in an oiled roaster and brown on all sides. Add 1 small cut onion, 5 grated cloves of garlic, 1C orange juice, 1t salt, and pepper to roaster. Top with 3 thyme sprigs and 2T sherry vinegar. Cover and simmer 15-20 min. Remove loin and reduce sauce. Top loin with sauce.
