Marinara and Spaghetti Squash

1 lb. ground beef
3T olive oil
1 medium onion, chopped
2 garlic cloves, grated
1 1/2c diced carrot
1 zucchini, sliced
1 summer squash, sliced
3.15 oz. can tomato sauce and/ or diced tomatoes
1 can tomato paste
1c cold water
1T basil
1/2T oregano
1T brown sugar
2 small bay leaves
salt + pepper
Parmesan cheese (check label)

the sauce:

Sauté beef in olive oil with onion and garlic in an olla. Add carrot, squash and zucchini. Mix in remaining ingredients and simmer for 30 minutes. Serve over spaghetti squash or gluten free pasta. 

the spaghetti squash:

Halve a spaghetti squash, scoop out seeds and place in roaster. Cook at 375° for 45 minutes.
