Cold Pea Soup

3T unsalted butter
1 medium white onion, chopped
1 1/2t Kosher salt
2 16 oz. packages frozen peas
1c greek yogurt
1 sprig of mint

Melt butter in a large heavy pot. Add onion and cook until soft but not brown. Add salt and 2 cups of water, bring to a boil. Add peas and mint, cook for 2 minutes. Remove from heat and stir in yogurt. Puree in blender and season with salt and pepper. Chill and garnish with olive oil, mint and cheese.
