Ajo Blanco

This is cool and creamy and a treat in the heat.
Hardest part of the recipe is waiting for this to chill.

1 c Marcona almonds
1 c stale bread, cut into cubes
2 cloves garlic
1 T sherry vinegar
1 tart apple, peeled and sliced
salt and white pepper to taste
1 c cold water
1/3 c olive oil
green grapes, halved

Place bread, vinegar and water in blender add almonds, apples and garlic. Pulse until creamy smooth. Blend on low and add olive oil, season w/ salt and pepper.

Chill for several hours, drizzle with olive oil sprinkle with halved green grapes and a few slices of peaches.
