Tomato and Onion Dressing

Made with fresh produce and just a splash of EVOO, you can pour on the dressing and still meet your health goals for the week with this recipe.

This Tomato and Onion Dressing is a cool, creamy topping to add a bit more flavor to your summer vegetables or salads. You can blend this dressing more thoroughly than we have pictured, if you prefer a smooth texture.


Ingredients

1 Large Tomato
1/2 Sweet Onion
3 Cloves Grated Garlic
2 Flat Leaf Parsley, chopped
6 T EVOO
2 T Sherry Vinegar
1/2 Chili Pepper
salt and pepper

 

Directions

  1. Roast the tomato in the oven on high heat for 20 minutes. Once cooled, carefully remove the skin and core.
  2. Remove seeds from the chili pepper and then finely chop half.
  3. In a food processor, blend the onion, garlic, chili and parsley to a paste consistency.
  4. Add tomato, oil and vinegar. Blend thoroughly.
  5. Season with salt and pepper to your taste.
