Gluten-Free Chicken Curry

2 lbs. Chicken Breast, cubed
2T coconut oil
1T curry
3 cloves garlic, grated
1 medium onion, chopped
1c chicken stock
1c full fat coconut milk
3T tomato paste
1/2t salt
1/4t pepper

Heat oil with garlic and onion. Cut Chicken into bitesize chunks
Add chicken, cook. Add remaining ingredients, simmer 20-25 minutes until chicken is cook through. Serve over riced cauliflower, vegetables, or traditional rice.
